Festival
    
1 1/2 cups flour 
Pinch allspice 
1/2 teasp. Salt 
3/4 teasp. Baking powder 
3 tbsp. cornmeal 
21/2 tbsp. brown sugar 
1/4 teasp. Rose water 
1/2 teasp. Vanilla essence 
3/4 cup water
    
For dipping
3 tbsp. flour 1 tbsp. cornmeal
    
Oil For frying
    
Sift the first four ingredients. Add the cornmeal and sugar.
Add the rose water and vanilla to the water. Add the water
to the dry ingredients, binding to form a soft dough. Knead
lightly. Leave, covered, for 30 minutes. Divide the dough
into eight portions. Flour hands. Knead lightly, and then roll
and pull each portion to form a 6 in. x 1 1/2 in. length, 
about l/8 in. thick.
    
Dip the Festival in flour and cornmeal mixture then fry
in plenty of hot oil until golden brown. Pierce with a fork
whilst turning. Serve hot.
    
If serving the Festival with fried fish, fry the
Festival after the fish, in the same oil. Makes 8 Festivals.
