PIE CRUST PASTRY 

This pie crust should serve you well, whatever you choose as filling.

2 cups all purpose flour 1 pinch of salt
5 tablespoons unsalted butter 
3 tablespoons shortening 
About 1/3 cup ice water

Combine flour, salt, butter and shortening in a medium bowl  until mixture resembles  coarse meal. 
Pour  in just enough water to form a dough. Divide dough into 2 balls. 
Dust these in flour and cover with plastic wrap, then refrigerate for 30 minutes.

Roll out each ball to an 11inch circle.
Place 1 of the circles in a 9 inch pan and crimp  edge.
Depending on recipe, you can use other circle as a top crust or as a separate pie crust. 
To use as prebaked crusts, preheat oven 425F (205C. 
Bake in preheated oven about 15 minutes, or until gold brown. Or bake as recipe directs. Makes 2 crusts.
