SWEET POTATO PUDDING

1 1/2 lb sweet potato
2 ozs yellow yam
3 cups coconut milk
1 t spoon cinnamon
1/2 tspoon ground ginger
1 t spoon mixed spice
1 tspoon grated nutmeg
1 1/2 t spoon vanilla essence
1 1/2 t spoon salt
1 cup brown sugar
4 tble spoon raisins
2 tble spoon currants
1 1/2 - 2 cups flour
2 tble spoon rum (optional)
1 oz margarine

Puree sweet potato coconut milk and yam in blender
Pour mixture into a bowl add all the other ingreidents except margarine
mix to dropping consistency, pour into a well greased 8" square tin and dot with margarine.

Bake at 350 F for 1 - 1 1/2 hours. The pudding sets as it cools, more flour will make it firmer.
