Flan (Vanilla Custard)

1/2 cup of sugar
5 small eggs
1 tablespoon of vanilla extract
1/8 teaspoon of salt
a pinch of nutmeg
1 14- ounce can sweetened condensed milk
1 12- ounce can evaporated milk

In a saucepan heat the sugar until it turns into a caramel color, do not
burn. Pour into an 8 inch casserole or mole dish and set aside.

In a bowl, add the eggs and whisk until foamy. Add all the other
ingredients and mix well. Fill a pan large enough to hold the mold
halfway with water. Place the mold in the middle of the pan making sure
the water doesn`t seep into the mold. Turn the stove on to medium heat
and place the pan on top. Partially cover the pan and cook for 40 minutes
or until a toothpick comes out clean when you stick it into the middle of
the flan. Refrigerate until cold and serve with fruit.
